Seafood Tetrazzini…..a New Spin on an Old Classic

 Are you tired of the same old casseroles that you serve to your family in the cold months of the year?  Why not try a spin on a family favorite and turn your turkey tetrazzini recipes into a delicious Seafood Tetrazzini?  This flavorful dish is prepared the same as the classic version with a few added ingredients that blend in so well with the seafood.  It will become an instant hit!

 

1/2 lb. spaghetti or egg noodles, cooked6 tablespoons chopped onion2 tablespoons olive oil2 cans cream of mushroom soup1 1/2 cups water1/2 cup grated Romano cheese, split2 cups shrimp or clams2/3 cup sliced black olives2 tablespoons chopped parsley2 teaspoons lemon juice1/8 teaspoon dried thyme and marjoram

 

Directions:

Preheat broiler.

Heat 2 tbs olive oil and saute’ the onion until golden brown.  Add the soup, water and 1.2 of the cheese.  Stir in the seafood and olives and heat thoroughly.  Add the lemon juice, parsley and herbs.  In a greased casserole dish, toss the sauce with the cooked pasta.  Top with the remaining parmesan cheese.  Heat under the broiler until golden brown.  Serves 8.
